I have been pretty broke lately. My husband is unemployed and just does side jobs here and there. So don't mind if my next few posts aren't super exciting food wise, since I will be working with whatever I have in the house.
Breakfast today, sorry for the crappy picture. This is my version of muesli:
1 cup organic oats (soaked the night before in water, not necessary)
1/2 cup coconut milk
and the rest to taste
Goji berries
Cacao nibs
Chia seeds
Hemp protein powder
Organic almonds
Coconut shavings
Sweetener of your choice

I wanted cookies yesterday, so I looked through my cupboards and I had just enough vegan chocolate chips to make one of my favorite cookies. These are chocolate chai cookies. So so yummy! The recipe is in an older post on my blog HERE. My friend stopped by and I told her, guess what? I made THE cookies! She screamed, YES!!! I gave her a baggie full, and she ate about four just standing in the parking lot. If you love the taste of chai tea, you will adore these.
mmm those cookies look lovely. I've been thinking about baking lately, but I wasted all my chocolate chips on trail mix ;-)
ReplyDeleteDianne- Oh, bummer. I know I hate how expensive vegan chips are. I wish I could have an unlimited supply :) All I have now is the regular chocolate chips that are my husbands, but those have milk in them.

Bummer to be unemployed. With everything to worry about, posts should not be a concern. I'm sure the ideas will flow - you always have such interesting things to write about. Pantry challenge?

ReplyDeleteOh, Carissa, I totally know how it is to struggle financially. With a family on one income, and that income being shredded by our Governor b/c my hubs a state worker, it is very hard. Hang in there - it will improve! I think it's fabulous that even though you've got no money dough, you made some cookie dough! And then, to show your true spirit, you shared said cookies! I'm looking forward to seeing what inexpensive dishes come forth. If you need some ideas for cheap meals, just give me a holler.

My hubby was out of work for over a year until two months ago...I can relate...hang in there...you always have healthy and delicious food on the blog nonetheless. Those cookies look really good; I love chocolate paired with spices like cloves and cinnamon YUM!

ReplyDeleteCarissa - it sounds like a lot of us "get you" on the financial front, we've been on a pantry cleanse and have damn near cleansed our entire pantry, ahh! However the fact that you were able to whip up some delicious looking cookies in light of all that is amazing - just like how those cookies look!! Yum!
