Tea & Chocolate

Sun tea! I just used a regular Lipton tea bag with some fresh peppermint leaves and brewed it outside in the sun.
Fresh kale & apple juice with half a scoop of chia.

Spinach Pasta

Blend together all the following ingredients:
2 handfuls of spinach
3 garlic cloves
zest of one lemon
half a can of coconut milk
sea salt
thai sweet basil (just a little)
pohnpei pepper (regular is fine)
nutritional yeast (to taste)

Boil pasta until cooked .
Saute 1/2 mushrooms in olive oil, then add all above ingredients until warm. Eat!

I'm kind of PMSing right now, so I am eating chocolate like it's no ones business! I made some awesome hot chocolate, because the ice cream sandwich wasn't enough. This is only enough for one serving, so double if it's for two.

Coconut Hot Chocolate

1/2 can coconut milk
2 Tbsp cocoa powder
2 Tbsp agave
1 Tbsp raw sugar
(less sugar or agave if you want less)
1 vanilla bean
cocoa nibs (added last)

Boil it all together and drink! Using coconut milk to make hot chocolate is amazing. If you have not tried it, you really need to.

  1. Now I gotta make some tea! That pitcher is really pretty, too.

  2. Mmm I love coconut milk hot chocolate! I need to do it more often. Hmm...

  3. The pasta sauce looks fantastic! Great post!

  4. Great idea to add chia to juice...another one I never thought!!! Everything looks delish, especially that creamy pasta:)

  5. Stacy- thanks :) I love suntea. I mean, I know it's the same as brewed tea, but it's always fun to do.

Dianne- I'm glad to find someone else who shares my love for coconut hot chocolate. For me, it's coconut anything!

Shen- thanks! I loved it! Super easy too, try it!

Evergreen- I add chia to pretty much all my juices, just to have those extra vitamins. The pasta was so yummy!

  6. Lovely pics. That pasta does sound so good.

Also, I wanted to mention that I really enjoyed reading about your animal family members in your sidebar. They are all treasures...Nano is soo cute. I volunteer at my local animal shelter and all those "excuses" sound familiar. They are better off with you anyway for sure...they all look so happy and healthy.

  7. Rose- Thanks for checking out my babies. I decided to add that on the sidebar. I am glad you like it:) it's so good to hear that you volunteer for an animal shelter! I wish you lived here so that you could volunteer for my rescue:)

  8. Oh, I didn't notice the babies in the side bar. Neat idea!

  9. Thanks your your comment on my blog, and the add! See you around!

  10. Shen- I love my babies.

    Carmina- thanks for stopping by!

  11. PMS here too! All of a sudden last night I told David, I really wanted some chocolate. What a timely post and I have those exact cacao nibs. Perfecto!!!

  12. Jeri- Oh the hot chocolate totally hits the spot! Plus, I always have coconut milk in the house somewhere :)
