Sorry everyone for the super late Thanksgiving post. Better late than never though right? In this picture above I brought Sonic inside, because there was a squirrel in the tree and he was going nuts! I know that Sonic wouldn't intentionally hurt the squirrel because I have taught him better than that. I was just worried that the squirrel would have heart failure from all the barking. This was Sonic's first squirrel sighting ever I think. If you look on the first branch on the right you can kind of see the squirrel up there.
Groceries!
Rolls
Brussels Sprouts with Pomegranates
- 6 Tbsp Earth Balance butter
- 1 vanilla bean
- Salt and pepper
- 1 pound Brussels sprouts
Mix all above ingredients. Put on a baking pan and roast in oven at 375 for 20 min. Take these out and set aside.
- 3 Tbsp pomegranate molasses
- Seeds from 1 pomegranate
Pour pom and pom molasses over brussels sprouts. Eat!
Pumpkin Orzo
This was awesome!
- 1 1/4 cups vegetable broth
- 1 cup fresh pumpkin
- 2 Tbsp Earth Balance butter
- 1 tsp agave
- 1 tsp balsamic vinegar
- 1/2 tsp grated fresh ginger
- Sea salt
- Black pepper
- 1/2 cup orzo
- Fresh Sage leaves (to taste, I added about 10)
Combine the broth, pumpkin, butter, agave, balsamic vinegar, ginger, salt, and pepper. Bring to a boil, then add orzo. Reduce the heat to low, and simmer until the orzo is tender.Add sage last.
My vegan feast of cornbread stuffing, mashed potatoes, green beans casserole, pecan pie, yams and pumpkin orzo.
Panther sunbathing. He enjoys basking in the sun whenever he can. It's not often sunny here like he was used to. Good bye fall, hello Christmas!
Carissa,
ReplyDeleteYour brussels sprouts look a lot like what my best friend did for Thanksgiving. He used vanilla butter, pomegranate molasses and pomegrante ariels.
I bet sonic was excited about his first squirrel. I hope more come to visit him.
Ali
I see the little squirrel! Our dog used to go bonkers over squirrels too!
ReplyDeleteYour feast looks so wonderful. What bounty. I love the brussel's sprouts with pomegranite and vanilla! I'm so glad you posted it...What a fantastic idea and flavor combo...I'm going to have to try that on for sure! Thanks for the recipe. The orzo also looks like a winner!
Thanks, Carissa, for posting your beautiful feast, no matter the date. It all looks wonderful! I hope Panther has a few more days of sun before the cold sets in for good.
ReplyDeleteHappy Thanksgiving everything looks great! :)
ReplyDeleteThat looks like quite a feast! Right now I am lamenting the end of my Thanksgiving leftovers. The Brussels with pomegranate sound really interesting, and it looks really good with the bright colors.
ReplyDeleteI like the photo of Panther; I am always trying to get a good photo of my black cats but they just look like dark shadows. He's handsome.
What an awesome Thanksgiving. The menu looks great. I know I had so much fun making mine. I kinda love your littl tukey though-so cute!!!
ReplyDeleteThis all looks SO delicious. I think I am going to try that pumpkin orzo, and please tell us how you made the vegan pecan pie.
ReplyDeleteSQUIRREL!
I haven't seen those Marshmallows before. Love the roll holder!
ReplyDeleteMaggie used to chase squirrels. They were always faster than she was though. :o)
ReplyDeleteLooks like you had a great Thanksgiving!
Those brussels look so yummy. Your pumpkin orzo sounds good. I may have to give that a try.
That is so sweet about Sonic Boy.
ReplyDeleteYour right better late than never. Your Thanksgiving meal certainly is a feast. I esp. like the look and sound of the pumpkin orzo.
Tiffany- Let me know if you try it!
ReplyDeleteAli- Oh that sounds very similar! Did you like it?
Rose- Let me know if you try any of it! Did your dogs eventually stop? I just worry about the squirrels. I don't want them to get hurt.
Blessed mama- Oh Panther loves the sun! So does my Koko. The other two don't really care either way :)
Sarah- You too!
Jessica- Oh I know, I feel you with the black cat pics. It's so hard to get a good one, which is why when I do, I just have to post it.
Jessica @ Limas- Thank you! I like my turkey too! That's the only turkey you will see at my Thanksgiving :)
Rachel-Sorry it took me so long to get back with you. Here is the recipe you can use for the pie:
1 cup brown sugar
3 tablespoons vegan butter, melted
Silken tofu- add however much you want until you like the thickness
1 1/2 to 2 cups pecan halves
2 tablespoons good-quality bourbon
Mix together and pour into a pie shell. Bake at 350 for 35 min.
Shen-I love these marshmellows!
Michelle- Let me know if you try the orzo. I really loved it.
Mangocheeks- I love my boy. He is such a sweet, hyper dog.
Carissa,
ReplyDeleteMy friend did enjoy his recipe. I haven't tried it yet but it sounded great to me. They may show up on the Xmas table. ;-)
