Hawaiian pancakes on a cold day

Here's my usual green smoothie. I think this one had kale, apple, avocado and chia seeds. My husband hated it, so I drank it all.

Rahjah, the inquisitor had to make sure this was safe for consumption.

Here are the Hawaiian pancakes. They are basically like crepes, but without the cream filling. I had an old recipe that I had to veganize and they turned out just lovely.

Hawaiian Pancakes

4 egg replacers (I've been using Ener-G)
1 cup flour
1 1/3 cup unsweetened organic almond milk
1 Tbsp organic agave
1/2 tsp vanilla

Pour all ingredients into a bowl and mix well. I normally whisk it to make it very smooth. The smoother the better! Pour about...a tennis ball size of batter in a hot pan on stove. Move your pan around so that the batter spreads all over the whole pan. I normally use a small pan that is the size of a large pancake. Cook on one side until it bubbles, flip it and serve! I eat mine with Earth Balance and Grade B Organic Maple Syrup, my fav!

This was lunch yesterday. I bought some garbanzo bean flour the other day and wanted to try it out for making some hummus. Not so good. I don't think I have the consistency right yet. I will let you know once I get a good recipe. I don't like to post recipes on here unless I reallllly like them :)

My parents gave us a gift card for Panchero's Mexican Grill, so we went the day after Christmas. I got the burrito bowl without sour cream or cheese. It was pretty tasty. It's so funny the looks I get from the employees at some of these places. They are like, no meat OR sour cream OR CHEESE!! 
This picture wouldn't let me rotate it. Oh well. We went to Blue Sushi last night near our house. I got the vegetarian lettuce wraps minus the yogurt sauce. These were really good! I love the peanut dipping sauce!

This was his new toy he just got yesterday from Costco. I wish I could show you about 5 minutes after he started chewing on it. There is cotton all over the floor and couch now. Thanks so much Sonic. He loves to shred his toys.

  1. My hubby hates my green smoothies too. He won't drink them unless they are mostly fruit and don't even look remotely green. Oh well.

    Your crepes are very impressive! And that lettuce wrap platter is beautiful. Crunch!

  2. Good luck making hummus from garbanzo flour. I only tried it once and hated the texture. I hope it works out better for you.

    Love the green smoothie, you know those are my favorite. ;-)

    You are right people do look at you odd when you ask them to leave off the meat and dairy. I guess I am so used to it I don't notice it much any more.

    My husband won't touch a smoothie if it has a hint of green color to it....his loss not mine...right...ha

    I get those odd looks all the time...oh well :o)

  4. Sonic is so cute! <3 My girls destroy toys very quickly, too. We've managed to find several that will last now.

    The pancakes look really good & easy to make. We might just have to give them a shot this weekend. Peanut sauce is one of my favorite things ever. :)

  6. Rose- My husband will normally drink apple/kale juice, but if there is more veggies in it, he won't. He hates when I make carrot/kale juice.

    Ali-You will be the first to know about it if I can figure out a good way to make hummus with the garbanzo flour.

    Michelle- Let me know if you try them! You can put anything on top too! Coconut syrup is best with mangos, mmm.

    Vegan Dog's Life- Glad to hear I am not the only one whos dog is a shredder, hah! Let me know if you make them, and if you like them! My husbands mom used to make these for them when they were growing up in Hawaii, because they were poor and these weren't too expensive to make.

    Jessica- You got it sistah! It's the best way to make tea if you have lose tea, I think :) I am REALLY bad at making regular pancakes, but I rock at hawaiian pancakes and waffles. Or at least I like to think so ;)
