Coconut Waffles:
2 cups flour
1 tablespoon baking powder
1/4 teaspoon salt
1 tablespoon raw sugar
1 cup coconut kefir
3/4 cup almond milk
1 teaspoon vanilla extract
1 apple banana
1 tablespoon coconut oil
1/2 cup shredded coconut
Mix together dry ingredients (except coconut). In a separate bowl, mash banana and add remaining wet ingredients to it. Add wet to dry and stir until just mixed. Fold in the coconut.

These smelled so good while cooking, just like my pumpkin waffles from November!
For dinner, I made some of these apple and onion pastries for him. I used American Humane Certified cheese only of course.
1 apple chopped
1 purple sweet onion chopped
Sharp cheddar cheese (to taste)
Pepper (to taste)
Homemade or premade puff pastry
Bake puff pastry. Saute onions and apples until soft. Add cheese until melted. Add pepper. Fill this into the baked pastry puffs. Eat!
