Green juice, power balls & walks

I am sure many will agree with me when I say that no day has officially started without green juice or a green smoothie. My husband bought me a cheepy blender to hold me over until all our things are shipped here, so I can have my smoothies again. It's nice because my food aversions haven't been so bad lately so I can stomach a lot more of my normal healthy food that I like. When I first got pregnant, almost everything would gross me out. This smoothie above had organic kale, bananas, chia seeds, chocolate Vega powder & almond milk.

The following are the ingredients I used for my Power Balls below:

GREENSuperFood chocolate powder (which I LOVE)
Dried coconut (no sugar added)
 Chia seeds
Steel cut oats
Pumpkin seeds
Coconut nectar
Leftover soaked cashews
Hemp seeds
Cacao nibs
 Coconut oil

I wanted something chocolatey but also super healthy, so I came up with these. Just blend together (or food process)  your pumpkin seeds and cashews, then add the rest of your ingredients. Slowly add coconut oil until everything is bound together. I added a little too much in mine so be careful.

This is the end result. This was actually before I froze them though. You can either freeze or place in refrigerator. These are so great as a quick snack for a little energy and protein on the go! Great for kids too :)

I went walking around my favorite gardens/park again yesterday with my dad. I have been trying to get some type of exercise every day so that my pregnancy and birth will all go smoothly. The picture above is a beautiful huge hitachi tree!

Here is another beautiful tree. My dad kept having to stop walking so I could take pictures with my iPhone. I can't help it! This place is so beautiful!

It was so nice to be able to make hummus again. I love hummus, but only homemade hummus. I hate store bought ones, unless they are fresh made ones.

Garlic Hummus

1 can organic garbanzo beans (peeled, this makes it so creamy, just peel each garbanzo bean)
2 Tbsp organic raw tahini
1-2 Tbsp organic coconut oil
2 cloves garlic
1/2 an organic lemon (squeeze out juice & add a little lemon zest too)
Water (to incorporate)

Blend all together until creamy!

Organic apple with almond butter

Panther acting crazy because I was visiting him. Only 9 more days!

  1. It seems like you are taking good care of yourself :-). Keep it up!!!

  2. I would be taking a ton of pictures there, too. There are so many photo opportunities in a beautiful place!

Wonderfully healthy food. I hope the next 9 days go fast for you!

  3. Those balls do look super healthy. I'll let you know if we try them. I prefer homemade hummus, too, and I'm pretty picky about packaged hummus. I don't like the ones with all of the preservatives. You're so sweet to visit your animals everyday. You're going to be a super Mom!

  4. Lots of healthy, yummy eats! That tree is amazing!

9 days and counting: I hope they fly by!

  5. Looks like a great walk with your dad! That tree rocks! :)

  6. The power balls sound great - I bought something similar today. I love that tree!

  7. Ok, so many things; gimme them power balls, that first tree is incredible, hand over the hummous, and I love panther!

    Love your blog :-)

  8. I'm so late reading this - now less than a week for Panther! I love it when my cats get so happy they roll on their backs. I'm sure you will both be delighted once he comes home.

I heard someone else talking about peeling the garbanzos. I will have to try that - I think it's more trouble than it's worth, but if y'all are saying to do it, I might fall for peer pressure.

  9. I'm with you 100%! I have to have my green smoothies for breakfast!
    Your power balls sound great!
That hitachi tree is beautiful! If I was close to a tree like that, I would be there all the time.

  10. When are you due? I am wondering if you and Beyonce will be giving birth at the same time.

  11. Great pictures. That tree is amazing. New England is beautiful, but we don't have trees like that.

I am thinking of making hummus this weekend. I know what you mean about homemade hummus; it is far superior to the pre-packaged kind.

Now only a few more days till you're reunited with your animals!

  12. Alessandra- I am trying you! You take too!

Molly- I love taking pictures of nature. It's funny because people will make fun of me sometimes and be like, Carissa, there's a human in that picture you took!! Because normally my pictures are food, animals and nature :)

    Jenny- Did you try um?

Get Skinny-I am so blessed to live here :)

Rose- The babies are back and I am so happy!

    HayMarket- Don't you love um!

Maud- I think I saw that post. And it's so easy to make your own if you have a bunch of random ingredients lying around/

Diary of an animal lover- Thanks for checking out my blog and I just finally added you to my blogroll :)

Jess- It's KINDA more trouble than it's worth, but if you have the time it really makes your hummus smoother!

Michelle-I'm glad someone else shares my love for huge trees and green smoothies :)

Shen- I think we are probably due around the same time. I am "due" March 10th.

Miss Rachel- It is so nice to be back with my babies :) And yes, homemade hummus is definitely superior.
