Sunday Breakfast

My husband decided to try going veg for a week. That being said, I have to come up with tasty recipes that he will enjoy and hopefully one day stay veg!

Coconut Waffles:
2 cups flour
1 tablespoon baking powder
1/4 teaspoon salt
1 tablespoon raw sugar
1 cup coconut kefir
3/4 cup almond milk
1 teaspoon vanilla extract
1 apple banana
1 tablespoon coconut oil
1/2 cup shredded coconut


Mix together dry ingredients (except coconut). In a separate bowl, mash banana and add remaining wet ingredients to it. Add wet to dry and stir until just mixed. Fold in the coconut.
These smelled so good while cooking, just like my pumpkin waffles from November!


For dinner, I made some of these apple and onion pastries for him. I used American Humane Certified cheese only of course.





Apple Onion Tarts

1 apple chopped
1 purple sweet onion chopped
Sharp cheddar cheese (to taste)
Pepper (to taste)
Homemade or premade puff pastry

Bake puff pastry. Saute onions and apples until soft. Add cheese until melted. Add pepper. Fill this into the baked pastry puffs. Eat!

Hummus & Raw Salad

This was my dinner last night, baked pita chips, hummus and cauliflower salad. For the pita chips, I had leftover pita bread in the fridge that was going to waste. So I cut in strips and brushed them with garlic, olive oil, and dill, then baked at 350 for about 10 min until crunchy.
For the hummus, I tried something new.This is what I used:
Hummus
1 can garbanzo beans
2 Tbsp lemon juice
2 Tbsp tahini
1/4 tsp sesame oil
2 Tbsp olive oil
3 cloves garlic
water -to consistency you want
salt
Food process all ingredients.
The sesame oil gave it a little different flavor. I liked it.
Cauliflower salad:
1 head of cauliflower (food processed into small granules)
1-2 tomatoes
1/4 cup maui sweet onion
1 avocado-cubed
1/2 a jalepeno
1 Tbsp lemon juice
1/4 cup cilantro
Cilantro- to taste
Olive oil-to tase
Paprika
Salt
Pepper
Mix all ingredients together. Eat raw!

Gypsy Soup

Gypsy Soup



Olive oil
2 cups chopped onion
5-6 cloves chopped garlic
2 cups sweet potatoes, chopped & peeled (or squash)
1/2 cup chopped celery
1/2 chopped carrots

In soup kettle, saute all above ingredients for 5 min.

Add:

3 cups vegetable stock
2 teaspoons paprika
1 teaspoon turmeric
1 teaspoon basil
1 bay leaf
dash cinnamon
dash cayenne
salt
pepper
Simmer, covered for about fifteen minutes.

Add:

1 cup chopped fresh tomatoes
3/4 cup chopped sweet peppers (or spicy, but be careful becaus the cayenne is already spicy)
1 cup cooked chickpeas or black beans
Simmer until potatoes are cooked through.



I also made my mom her own separate soup yesterday. It is a recipe from Guam that I tweaked to make vegan. It is a "get well" soup. It is very simple.
Cold or Flu Soup
Lots of garlic (to taste)
Lots of onion (to taste)
Water 1-2 cups
Sea salt
Cabbage
Hot peppers (optional)
Garlic is a healing food and very medicinal. It has been used in cancer prevention, to reverse high blood pressure, resist colds and flus among other things. Onions have two main components that are very good for sickness. Sulfur and quercetin: they each help to neutralize free radicals in your body.
Along with this, I made her a tea with the lose herbs I had. I mixed Yarrow with Echinacea tea. Yarrow has so many uses. It is used against colds, cramps, fevers, kidney disorders, toothaches, skin irritations, and hemorrhages, and to regulate menses, stimulate the flow of bile, and purify the blood.

Oh how I love seeds!

My good friend Jenny introduced me to a site called Rare Seeds. They have any type of vegetable or herb imaginable! I checked it out and went a little crazy. Once you start adding things to the cart you can't go back. Just check out and be happy :) I ordered about $24 worth of seeds. This is a list of what I got:

Shopping at Wholefoods

Hurray for payday! I was running so low on groceries. I picked up a bunch of raw organic goodness and a few other things.

Some of the things above are: apples, cauliflower, kale, Swiss chard, raw coconut butter, cashews, wild rice, mangoes, avocados, celery, cucumber, eggs and cheese.
*Also, the eggs that I buy are from cage-free and humanely raised chickens. I rarely eat eggs, but when I do these are the ones I buy.*




I have not eaten cheese in forever! It used to be one of my favorite things and I have slowly learned to live without it. It was the hardest of dairies to give up. I was so excited when I found this cheese! It is organic and American Humane Certified.
Now, American Humane Certified must meet these “five freedoms” protocols which include:
**Freedom from thirst and hunger – by ready access to fresh water and a diet to maintain full health and vigor.
**Freedom from discomfort – by providing an appropriate environment including shelter and a comfortable resting area.
**Freedom from pain, injury and disease – by prevention or rapid diagnosis and treatment.
**Freedom to express normal behavior – by providing sufficient space, proper facilities and company of the animal’s own kind.
**Freedom from fear and distress – by ensuring conditions and treatment which avoid mental suffering.
Out of all the hundreds of cheeses at Wholefoods this was the ONLY one that was American Humane Certified. So, as of now, this is the only cheese I will eat, and I still rarely eat cheese.

These are few of my raw favorite things




My husband got me a juicer! Yay! I've been having kale-apple juice pretty much daily now.





I just ordered this on Amazon. It's awesome! It makes your raw veggies into noddles!


What you see in the bowl here is zuchinni noodles. I then made some fresh pesto to put


on top. This just makes eating raw so much easier!
